As I peered into the fridge with a big yawn, I felt equally tired about breakfast options. With a 7 month old and a 3 year old that often seem allergic to sleep, mornings oftentimes feel like drudgery… As the coffee pot gurgled, spouted and steamed, I eagerly awaited the inhalation of a hot cup of caffeine to start my day, complete with my Peppermint Mocha creamer. Feel free to laugh because yes, I’m totally that person at the grocery story, buying all of the last 17 bottles to stock up through spring before it goes out of stock…this creamer is a bit of a vice for me!
While waiting for the coffee to brew, I noticed a can of cresent rolls in the back of the fridge, leftover from Thanksgiving. My mind started turning with what to make with it and I then remembered the Peppadew New York cheddar I sampled and bought the week before. The picante peppers offer a mildly sweet flavor profile with a hint of heat, marrying beautifully with the rich and creamy texture of the artisan cheese. Cheese is one of my all time favorite foods and I love trying out new recipes when I find one with a unique twist. It’s energizing to exercise my creative side in making new recipes from whatever contents my fridge holds at the moment – such a fun challenge!
I’ve been absolutely savoring all this cold weather here in the Pacific Northwest, and I’ve been craving a bit of peppery deliciousness in my cooking lately. There is something special about cooking with a bit of heat in cold weather, especially when it comes to added flavor. I have a propensity to throw in fire-roasted green chiles in many dishes I make. There’s a stock pile of these in my pantry and I love to incorporate them in eggs, grilled sandwiches and soups, adding a layer of flavor depth that leaves you wanting more!
This recipe is very versatile and easy to adjust with ingredients according to taste. The heat profile is mild with the fire-roasted green chiles, adding just a bit of flavor without being overly spicy. Choose your favorite cheese, and the ratios work just as well. Pepper jack works as a great substitute for the peppadew cheddar, and if you aren’t a chile fan, leave them out! I encourage you to at least try the green chiles, even just a tablespoon or two. It’s not very spicy and adds delicious flavor!
We’ve made this several times with different cheeses and my husband asked if we could make it a weekly breakfast tradition, so I’m thinking it’s a win! It’s always fun to switch up a meal with a new ingredient to avoid boredom with the same old thing. I’ll be making these turnovers weekly and experimenting with different cheeses and flavors of ham – find that thing that motivates you to get creative or energizes your soul. Mine is cooking, but think through what helps you feel energized, relaxed, and excited about life. Parenting with littles is an amazing experience – hard, amazing, tough, beautiful. We all need our outlets. Whatever it is that puts a kick back in your step and soothes your soul, embrace it!

And I must say, the creative juices and the success of the recipe woke me up even more than the coffee did!
Ingredients:
4 eggs (reserve one for the egg glaze/wash before baking)
2 tbsp milk
1 c. shredded cheese
1/4 c. onion
1/2 c. diced ham
3 tbsp fire-roasted green chiles, drained and pressed to eliminate excess juices
salt and pepper to taste
1/2 can cresent roll dough
1 1/2 tbsp green onion for a garnish
Directions:
1.Heat oven to 375 degrees.
2. Beat eggs and milk.
3. Sauté diced onion over medium heat for about 2 min
4. Add diced ham and cook a few minutes more, until onions are softened
5. Use 1/2 the crescent roll can to make a square and pinch the edges of the dough together so the egg mixture does not leak out
6. Place about 1 1/4 cup of scrambled eggs in the center and spread out while leaving about an inch of the edges to fold up and over
7. Sprinkle the shredded cheese evenly over the scrambled eggs
8. Fold the edges of the dough over the eggs and cheese, meeting in the center to make a square and pinch the edges together and place on a lightly sprayed cookie sheet or cake pan
9. Beat the remaining egg and lightly brush over the top of the turnover (egg glaze/egg wash)
10. Bake at 375 for 13-15 minutes or until dough is baked and slightly browned
Double the recipe to use a full can of crescent rolls, making 2 turnovers. We cut them in 4th’s when enjoying as a family but they also work well for brunch or breakfast parties, cutting each turnover into 8 wedges. The wedges make for a savory little crowd-pleasing finger food!
