These tasty treats are about as easy to make as they are to eat! The sweet and creamy cheese mixture paired with fruit preserves make for the perfect weekend breakfast pastry. We made these for Easter and are making them again for Mother’s Day this year. I love how simple they are to throw together with the ability to swap out flavors with different fruit preserves. No mixing, kneading, and rolling are needed as would be required with made-from-scratch dough, leaving you with truly tasty pastries minus all the work. If you are a mama making it yourself for Mother’s Day, the less work the better! When you need an easy, inexpensive option, Pillsbury cresents work fabulously.

Ingredients:
Low-Sugar Organic Apricot Preserves (Trader Joe’s)
2 packages Pillsbury butter flake cresent rolls (or original)
8 oz light cream cheese or neufchâtel cheese (slightly healthier than the full fat version while still holding up well without cracking or drying out when baked)
1 egg yolk
1/4 c. sugar
1 tsp vanilla
dash of salt
Instructions:
- Preheat oven to 350 degrees.
- Remove cresent rolls from package while leaving the roll of dough in tact.
- Cut each dough roll into 8 pieces.
- Place circular dough pieces onto non-stick pan about 3 inches apart. Work into about 3 inch pieces, stretching the dough while pulling the edges up to make a nest-like dough structure to fill with the cream cheese mixture and fruit preserves.
- Mix together cream cheese, egg yolk, vanilla, sugar and dash of salt.
- Place 1-1 1/2 heaping tablespoons of the cream cheese mixture into the center of the cresent dough “nest” and leave a small divet in the center to add preserves.
- Add 1/2- 3/4 tbsp fruit preserves in the center.
- Bake for 12-13 minutes and serve

*Make sure and use preserves vs. jelly or fruit syrups of any kind. Preserves gel and firm well in the center, remaining in place while other less dense options tend to run when they heat up in the oven.
