Holiday season is in full swing with Thanksgiving less than a week away! It’s such a special day to celebrate gratitude and reflect on the many blessings we share, especially within the presence of those we love. It’s also an incredibly busy time for many with planning the big meal and hitting the busy stores for those last few ingredients. This breakfast takes just a few minutes to make and requires minimal cleanup. You can cook it straight in your mug, leaving you more time to get everything done on your list for the morning!
I’m all about quick meals the week leading up to Thanksgiving Day, especially when hosting. It frees up my energy for planning, shopping, and getting ready to enjoy that memorable day with family and friends, not to mention reflecting on the beauty of all that is good in this season and beyond. Sweet Pecan Pumpkin Spice Oatmeal Recipe
Prep Time: 2 min/Cook Time: 1-2 min
Ingredients:
1/2 c. oatmeal
3 tbsp pumpkin puree
1 c. + 3 Tbsp sweetened vanilla almond milk
1 tsp vanilla
1/4 tsp pumpkin spice
1/4 tsp salt
1 tbsp dried cranberries
1 tbsp honey-roasted pecan pieces
1/2 tbsp pumpkin seeds
Instructions:
- Mix first 6 ingredients in a microwave safe mug and heat 1 1/2 minutes, or until cooked.
- Sprinkle dried cranberries, pumpkin seeds and honey-roasted pecans over the top and enjoy!
This recipe is really easy to customize according to your liking. The sweetened vanilla almond milk, berries and honey-roasted pecans make it a fairly sweet breakfast to begin with, but if you want to add a little more sugar, brown sugar is a nice touch! If you prefer your oatmeal a little less thick, add more almond milk. Craving a bit more pumpkin? Add a bit more puree. An added bonus: my two-year-old loves this oatmeal, plus she has no idea she is getting a good dose of veggies for breakfast making it a win-win!
